Nancy's Quick Chicken DinnerSchool days, wonderful busy school days. This is the season for football, volleyball, and field hockey games. It is also the time that parents are kept busy going to their children’s games or being the head taxi driver for their family. A few tricks of the trade will help you serve a delicious dinner on the go.
On those busy days when time is a premium, a store bought roasted chicken is a life saver. I like to make a spicy vegetable to compliment the meat. Broccoli is a wonderful and healthy side dish. I wash and cut the broccoli in medium size pieces, and make sure they are dry before placing in the pan.
Melt the butter, using about 1 tablespoon per 1 cup of broccoli. Sauté until it is heated through but kept firm. Turn off the burner and add soy sauce to your taste. If desired, add a few flakes of red pepper.
Spaghetti is a wonderful dish to go along with this meal. When the pasta of your choice is fully cooked and drained, add a little olive oil or butter along with salt, pepper and fresh basil and oregano. Toss with fresh parmesan cheese and serve.
A delicious dessert is brownies. I make brownies from a box mix. After making the mix, and before putting it in the pan, I add a few caramels that have been cut into pieces and put into the mix. Then bake according to the directions.
Taking about 35 minutes, this is a delicious and quick dinner that’s ideal for busy families.
