Broccoli Soup



My Friend Debbie


Ingredients:

  • 1 cup of fresh broccoli or 1 cup of frozen chopped broccoli

  • Small onion about 1/4 cup

  • Pepper and salt

  • 3 tablespoons butter

  • 3 tablespoons of flour

  • 2 cups of chicken broth/stock store bought or homemade

  • Heavy cream 1/2 cup

  • 1/2 cup of cheddar cheese that has been shredded

Directions:

  1. Cook (steam) your broccoli until tender, after cooking mash the broccoli into small pieces.

  2. Sauté your onion in butter in a sauce pan ( heavy ) until the onion is tender.

  3. Add the flour, pepper and salt and stir constantly until smooth. You may use a whisk to combine these ingredients together.

  4. Slowly stir in the chicken broth/stock until the soup thickens and starts to boil.

  5. The last ingredients to add is the broccoli, cream and cheese.

  6. Keep stirring until the soup is at the thickness that you prefer.

*A little treat to add before serving the soup is to add a few croutons. It gives the soup a little crunch and a gourmet look.* This recipe will serve 4.
