Broccoli Salad



     This is a great recipe for summer and fall. I like to serve it as a side dish for dinner or as a party dish. It has many healthful ingredients and it’s very flavorful. The best thing is that’s not very hard to make at all.

Ingredients:

  • broccoli florets
  • real bacon slices crumbled
  • mayonnaise
  • peanuts
  • raisins
  • chow mien noodles


Directions:

  1. Break broccoli into small bite-size pieces (approx. 4 cups).
  2. Cook bacon slices (approx. 4) and crumble.
  3. Add heaping teaspoon of mayonnaise (to desired consistency).
  4. Add peanuts (handful—I use the salted Planters peanuts).
  5. Add raisins and chow mien noodles (I use a handful of each).

Recipe will serve about a dozen people.
