Jenn's Edamame Salsa Salad



Here's a yummy cold salad with a southwestern flare!

Ingredients:

  • 1 bag of frozen Edamame (shelled)
  • 1/2 bag frozen white corn
  • 1/2 bag frozen yellow corn
  • 1 can black beans (drained)
  • 1/2 jar chunky salsa
  • 1/2 bottle Italian dressing
  • 1 splash of soy sauce (optional)

Directions:

  1. Mix ingredients in a sealable container and refrigerate overnight
  2. Serve chilled with tortilla or pita chips. 
  3. Or enjoy as a cold bean salad.
