Turkey Fried Rice



A recipe to help with leftover holiday turkey that the whole family will love.

In large skillet (I use a wok type skillet) heat oil. Then add garlic, scallion, soy sauce and eggs.  Stir until eggs are well cooked, about 3 to 4 minutes.  Mix in turkey and cooked rice (snow peas optional). Continue cooking about 4 to 5 minutes until all ingredients are heated thoroughly.

This is also a great recipe to use with leftover rice or chicken instead of turkey.

 

Ingredients:

  • 1 tbs canola oil
  • 2 cloves garlic
  • 2 cups cooked brown rice
  • 1 medium scallion (optional)
  • 1 tbs soy sauce (or more, based on your liking)
  • 3 large eggs
  • snow peas (optional)

Makes 3-4 servings.
