Potato Corn Chowder



My Friend Debbie

Ingredients:

  • 1/2 cup chopped celery

  • 2 green onions, sliced

  • 2 T butter

  • 1 cup water

  • 2 T chicken broth powder

  • 1/8 t pepper

  • 2 cups mashed potato flakes (or 6-8 chopped regular potatoes)

  • 2 (17 oz) cans of corn, drained

  • 2 cups Half/Half


Directions:
1. In a large Dutch oven, sauté celery, onions, and butter until tender.
2. Add water, broth powder, and pepper.
3. Cook over medium heat until powder is dissolved.
4. Remove from heat.
5. Stir in potatoes and corn until blended.
6. Add Half/half.
7. Return to heat, stirring frequently-do not boil!!
