Pancakes from Scratch



My Friend Debbie     These pancakes will be the best you have ever had and you should never want to resort to a prepackaged mix again. These are good anytime of day!

     Recipe makes 10-12 normal size pancakes. The recipe can easily be doubled for a bigger crowd.

Utensils you will need:

  • hot griddle
  • 2 bowls
  • whisk
  • spatula

Ingredients:

Dry:
     2 cups flour (all purpose)
       (can be substituted for 1 cup wheat and 1 cup white flour)
     2 Tb sugar
     4 tsp baking powder
     1 tsp salt

Wet:
     2 eggs beaten
     1 1/2 cups milk
     1/4 cup vegetable oil

Directions:

  • Heat griddle.
  • In first bowl add all dry ingredients and gentle stir with whisk. In second bowl add eggs and beat with whisk first then add remaining wet ingredients.
  • Pour the wet ingredients in with the dry ones and whisk lightly until mixed. Batter should remain quite lumpy (don't worry lumps will disappear during cooking). If you over mix you will have flat crepes instead of fluffy pancakes.
  • Melt a tablespoon of butter on griddle and pour out 1/4 cup of batter for each pancake. Once several air bubbles appear, flip.
My Friend Debbie Top with any of the following:
  • Syrup
  • Powdered sugar
  • Whipped cream
  • Chocolate Chips (can also be added directly into the mix)
  • Strawberry or blueberry jelly
  • Peanut butter
  • Chopped walnuts or pecans (can also be added directly into the mix)
  • Any fresh fruit, such as sliced bananas, strawberries, blueberries
*My favorite is a little maple flavor syrup and whip cream.

Tips for making GOOD pancakes:

* Never over mix the ingredients, your pancakes will be tough and not as fluffy.

* Always use a hot griddle, first tested by a few drops of water. When drops of water dance on the griddle it is ready.

* Flip only once, wait until air bubbles appear all around the corners of the pancake, then you know it is ready to flip.

* Once flipped, remove from griddle within 30 seconds.
