Marinated Cheese



My Friend Debbie **Prep: 15 mins**
**Refrigerator Time: 8 hours**

Ingredients:

  • 1/2 c. olive oil
  • 1/2 c. white wine vinegar
  • 1 tsp sugar
  • 1/2 tsp pepper
  • 5 cloves garlic (refrigerated/minced)
  • 3 T. fresh chopped parsley
  • 1 jar pimentos
  • 1/4 tsp dry basil
  • 8 oz block of cream cheese
  • 8 oz block of cheddar cheese (can buy already pre-sliced)
Directions:

     Mix all ingredients together except cream cheese and cheddar cheese. Place to the side. Cut each block of cheese lengthwise; Cut each lengthwise piece into 3/4" thick slices. Place a slice of cream cheese then a slice of cheddar; Keep this pattern until all cheese is used. Next, pour mixture over cheese arrangement; Cover with foil and refrigerate for 8 hours. Serve with a variety of crackers.

*Note: It is the mixture that makes this appetizer so appetizing. I do different things with the cheese depending upon how many I'm serving. I usually use a bread pan or even a square 8x8 pan and try my favorite cheeses (though you should always make sure that cream cheese is a part of the combination, and you may need more cheese depending upon the size of the pan you use.) When you pour the marinade mixture over the cheese, just make sure it's not too much (sopping on top of your cheese). This delicious appetizer is quick and simple, but your friends will think it's a true culinary delight!
