Easy Hummingbird Cake



Ingredients:

Cake:

  • 1 box spice cake mix
  • 100 grams sugar
  • 3 large eggs
  • 3/4 cup sunflower oil
  • 8oz can crushed pineapple with juice
  • 1 1/2 tsp vanilla
  • 2 mashed bananas
  • 1 cup chopped pecans


Icing:

  • 1 8oz of cream cheese softened
  • 1/4 cup butter softened
  • 3 cups powder sugar sifted
  • 1 tsp vanilla
  • 1/2 cup chopped pecans

 

 

Directions:

For cake:

  1. Preheat oven to 350.
  2. In one bowl, stir cake mix with 100 grams of sugar.
  3. In second bowl mash bananas and then mix in all other wet/liquid ingredients.
  4. Gently add the liquid ingredients in with the dry ones, stir until combined well.
  5. Bake in two non-greased 9 -inch round pans for approx 25 minutes. Watch closely.
  6. Remove from oven, let sit for 5 minutes and then invert on a cooling rack.
  7. Once completely cooled you can icing cakes. Remember when you are stacking cake layers, always turn your bottom layer upside down.


For Icing:

  1. With an electric mixes cream cheese and butter, add in vanilla and then slowly add powdered sugar.
  2. Once all creamed well, stir in pecans.
  3. Refrigerate for 1 hour so icing can set.
