Baked Potato Soup



Ingredients:

  • 8 large baking potatoes
  • 1 stick butter
  • 2/3 cup flour
  • 6 cups milk
  • ½ t pepper
  • 4 cups shredded cheddar cheese
  • 4-6 green onions, chopped
  • 1 (16 oz) carton sour cream

Directions:

  1. Wash potatoes, prick with fork, place in oven at 400 degrees for 1 hour.
  2. After cooled, cut potatoes and scoop out filling.
  3. Melt butter in large soup pot on low.
  4. Add flour and stir until smooth.
  5. Add milk, potatoes, pepper, cheese, and green onions. DO NOT BOIL.
  6. Stir in sour cream.
