Chocolate Cake: The Way it Should Be!



Ingredients:

  • 2 c sugar
  • 1 c water
  • 2 c self rising flour
  • 1 tsp baking soda, dissolved in
  • 1 stick butter, softened
  • 1/2 c of buttermilk
  • 1/2 cup oil
  • 2 eggs
  • 4 tbs cocoa powder
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 300F.
  2. Grease  9x13 pan with shortening.
  3. Bring water to a boil.
  4. Add to first five ingredients.
  5. Mix well with electric mixer.
  6. Add the remaining ingredients.
  7. Mix well.
  8. Bake 35-45 minutes(watch carefully to not over bake, when toothpick inserted in middle comes out clean, its ready).
  9. Pour frosting over cake and return to oven for 5 minutes.


Frosting:

  • 1 box powdered sugar
  • 6 tbs buttermilk
  • 1 stick butter
  • 1 tsp vanilla
  • 4 tbs cocoa powder
  • 1/2 c chopped pecans


Directions:

  1. Sift the powdered sugar in mixing bowl.
  2. Bring to a boil the butter, buttermilk and cocoa.
  3. Pour hot mixture over powder sugar and stir well.
  4. Mix in the vanilla and pecans.
  5. Pour over hot cake and return to oven for 5 minutes.
