Sweet Potato Muffins



Ingredients:

  • 1 cup cooked, mashed sweet potatoes (approx. 2 large sweet potatoes)
  • 1 ½ cups whole wheat flour
  • 2 ¼ tsp baking powder
  • ¾ tsp salt
  • 1 cup sugar
  • ½ tsp cinnamon
  • 2 eggs
  • ¾ cup canola oil
  • ½ cup chopped walnuts or pecans

Directions:

  1. Preheat oven to 350 degrees.
  2. In large bowl, combine sweet potatoes, flour, baking powder, sugar, cinnamon, and salt.
  3. Add eggs and oil, blend well.
  4. Stir in nuts.
  5. Pour batter into greased muffin tin until ¾ full.
  6. Bake 15 minutes, or until springy.
  7. Makes 1 dozen muffins.
