Coconut Pie

Filling Ingredients:

  • 1 c. Milk
  • 1 c. Sugar
  • 3 Eggs Yolks (save whites for meringue)
  • 2 T. Cornstarch
  • 1 tsp. Lemon Flavoring
  • 1 c. Coconut, shredded

Filling Directions:

  1. Over low heat, eggs yolks and milk
  2. Add in sugar and cornstarch
  3. Cook until thick
  4. Remove from heat and stir in the lemon flavoring and coconut
  5. Pour into baked pie shell

Meringue Ingredients

  • 3 egg whites
  • 3 tsp. sugar
  • 1 tsp. Lemon flavoring
  • 1/2 c. Coconut, Shredded

Meringue Directions:

  1. With electric mixer beat egg whites, sugar lemon flavoring until stiff peaks form
  2. Pour over pie filling
  3. Sprinkle with coconut
  4. Bake until top is golden-brown
