Garlic Mashed Potatoes



My Friend Debbie

Ingredients:

  • 1 head of garlic, top sliced off
  • 2 tbsp. olive oil
  • 6 to 8 Yukon gold potatoes or potato of choice
  • 1 tbsp. salt
  • 1 cup milk, warm
  • 1 stick of butter, softened
  • Salt & black pepper to taste

 

Preparation:

Preheat oven to 400 degrees. Place garlic on a piece of foil and drizzle with olive oil. Close to make a sealed packet and bake for 40 minutes, until softened, let cool. Put washed and cut potatoes in large pot, cover with cold water, and add salt. Bring to a boil; simmer until potatoes are fork tender, 20 to 30 minutes, and drain. While still warm, mash potatoes or press through a ricer. Whip in milk and softened butter until potatoes are fluffy. Squeeze garlic from bulb and mash, fold into potatoes. Salt and pepper to your liking.
