King Ranch Chicken

My Friend Debbie


  • 1 pkg. of tortillas

  • 2 cans of cream of chicken soup

  • 1 can of Ro-Tel tomatoes with green chilies

  • 1 chicken, boiled, deboned and chopped

  • 1 onion, chopped

  • 1 lb. of grated Monterey Jack Cheese


     Grease (or spray with Pam) a 10 x 14-inch pan. Shred tortillas into pieces and place in bottom of pan. Then layer chicken, onions, and cheese. Repeat layers. Mix soups with 1/2 cup water and Ro-Tel tomatoes. Puncture layers with a fork. Pour liquid mixture all over layers. Sprinkle remaining cheeses on top. Bake at 420 degrees until cheese is melted and bubbly, about 20 minutes.
