Momma's Home Baked Lasagna



My Friend Debbie      A tradition for more than 50 years, my mom has made the best lasagna I have ever had. Little did I know, she took shortcuts like using jarred spaghetti sauce and pre-shredded cheese. But in this day and age, that is just what we need: time-savers!! Here you go. . .

Ingredients:

Cheese Filling:

  • 1 pint low-cal cottage cheese
  • 3 eggs
  • Salt and pepper, to taste
  • 2 cups shredded mozzarella (1 pkg)
  • 1 tsp nutmeg (or cinnamon)
Meat Sauce:
  • 1 or 1.5 lb lean ground beef
  • 1 jar Prego or Ragu original spaghetti sauce
  • 9 lasagna noodles, cooked and rinsed
  • Melted Cheese topping: You can set aside some shredded cheese from the filling or use a second package of the shredded mozzarella.
     Preheat oven to 350 degrees. Mix cheese filling ingredients in medium bowl. Set aside in refrigerator. In large skillet, brown the ground beef until there is little pink. Using a spatula, break up the chunks of beef into small pieces, then pour in the spaghetti sauce and stir well. In oblong pan, add the following layer by layer:

Layer 1. Meat sauce, noodles (cover the meat sauce completely), cheese filling.
Layer 2. Meat sauce, noodles, cheese filling.
Layer 3. Noodles, meat sauce, shredded mozzarella.

     Cover and bake at 350 for 30 minutes then remove foil and bake 15 minutes more to brown the cheese on top. Remove from oven and let stand for 5-10 minutes prior to cutting.

**Note: After making this a few times, you must remember that you need enough meat sauce for three layers and enough cheese filling for two layers, so try not to use up all your meat sauce in the first two layers, then not have any left for the top!! Same with cheese filling - split it ahead of time if you have to!!
